Hot Potato Salad
Delicious warm favorite side
- 6 medium potatoes
- 2 hard-boiled eggs (chopped)
- 4 slices bacon (diced)
- 1/4 cup minced onion
- 1 egg (beaten)
- 1/4 cup cider vinegar
- 2 tsp. salt
- Cook potatoes.
- Add chopped eggs.
- Fry bacon and onion until a delicate brown.
- Strain, reserving bacon fat. Add fat slowly to beaten egg and beat well.
- Add vinegar and salt and pour mixture over potatoes.
- Mix lightly to blend well; heat in double boiler.
- Serve hot.
