Lobster Salad

Wonderful summer classic.

  • 1 pound cooked lobster meat (cut into bite-size pieces)
  • 4 tablespoons chopped celery
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 3 tablespoons chopped green scallions
  • 4 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Salad greens
  1. In large salad bowl, place all the ingredients with the exception of the mayonnaise and salad greens.
  2. Chill in the refrigerator for at least 2 hours.
  3. Before serving, add mayonnaise and toss well.
  4. Serve over salad greens.
