Wonderful summer classic.
- 1 pound cooked lobster meat (cut into bite-size pieces)
- 4 tablespoons chopped celery
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 3 tablespoons chopped green scallions
- 4 tablespoons chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Salad greens
- In large salad bowl, place all the ingredients with the exception of the mayonnaise and salad greens.
- Chill in the refrigerator for at least 2 hours.
- Before serving, add mayonnaise and toss well.
- Serve over salad greens.
