New England Boiled Dinner

A true one pot meal

  • 5-6 pounds corned beef brisket
  • 1 large onion (sliced)
  • 1 celery stalk (chopped)
  • 4 tablespoons whole pickling spice
  • 3 large cloves garlic
  • 1 medium head cabbage (core removed and cut into wedges)
  • 6 carrots (peeled and cut into large pieces)
  • 2 medium turnips (peeled and cube)
  • 8 Red potatoes (cubed)
  • Salt & pepper
  1. Place brisket in large stock pot and cover with water.
  2. Add the onions, celery, spices & garlic
  3. Cover and bring to a boil.
  4. Reduce heat to a simmer and cook for 2-3 hours
  5. Remove the meat when done and strain the liquid.
  6. Reheat the liquid and add the carrots, potatoes and turnips.
  7. Cook 15 minutes and season to taste with salt and pepper.
  8. Add in cabbage and cook an additional 10 minutes
  9. Serve the meat with the cooked vegetables.
