New England Boiled Dinner
A true one pot meal
- 5-6 pounds corned beef brisket
- 1 large onion (sliced)
- 1 celery stalk (chopped)
- 4 tablespoons whole pickling spice
- 3 large cloves garlic
- 1 medium head cabbage (core removed and cut into wedges)
- 6 carrots (peeled and cut into large pieces)
- 2 medium turnips (peeled and cube)
- 8 Red potatoes (cubed)
- Salt & pepper
- Place brisket in large stock pot and cover with water.
- Add the onions, celery, spices & garlic
- Cover and bring to a boil.
- Reduce heat to a simmer and cook for 2-3 hours
- Remove the meat when done and strain the liquid.
- Reheat the liquid and add the carrots, potatoes and turnips.
- Cook 15 minutes and season to taste with salt and pepper.
- Add in cabbage and cook an additional 10 minutes
- Serve the meat with the cooked vegetables.
